Avocado Salsa


It might be mid October, but the southern California weather is super confused.

Due to our early autumn heat wave, I was forced to put away my boots and cute sweaters I busted out during last weeks rain storm and trade them in for wedges and a summer dress.

It was 102 degrees F when I got home from work last night people.

At six in the evening.

My Arizona friends were quick to point out that it was hotter in Orange County than in Phoenix yesterday.

That’s just not right.

So instead of diving into some new soups like I’d planned, I opted for salsa, tacos and a fresh salad.

Now if only I could eat my leftovers at the beach instead of at my desk, this Indian summer would really be welcome.

You will need…

1 large cucumber peeled, seeded and cut into chunks (about 2 cups)


2 avocados, cut into chunks


1/2 red onion, diced


2 limes, juiced (about 1/4 cup)
Salt to taste
1/4 cup chopped cilantro leaves


2 jalapeno chilies, chopped (seeds removed if you are a baby like me)


1 tablespoons red wine vinegar

Place cucumber, avocado and onion in a large bowl and add lime juice, vinegar and salt.

Add cilantro and chilies and toss gently.


Serve with your favorite chips or on tacos.
