I am tired. TIRED. Tired of laughing. Tired of smiling. Tired of joking. Tired of drinking. Tired of dancing. Tired, tired, tired. This past weekend was amazing, but exhausting.
Unfortunately for you, and even more so me, I think I am too tired to be funny. This time I’m going to have to let the food speak for itself. Hopefully, for both of us, tomorrow I won’t be to tired, because tonight was pretty delicious and I hope I can be funny to tell you about it.

Avocado and mango salad with almond slivers, goat cheese and passion fruit vinaigrette

Love and Beer Floats
Avocado and Mango Salad
1 mango sliced
1 avocado sliced
1/4 cup goat cheese crumbles
1/4 cup almond slivers
8 ounces of your favorite greens
Passion Fruit Vinaigrette
3 tablespoons frozen passion fruit juice concentrate, thawed
3 tablespoons minced shallot
4 teaspoons Sherry wine vinegar
1 teaspoon Dijon mustard
1 teaspoon whole coriander seeds, coarsely cracked
3 tablespoons olive oil
Combine vinaigrette ingredients in food processor and blend.
