Halibut Veracruz

Lish and I have reached the home stretch my friends. In one month and two days, my good friend and roommate will say her vows and become a wonderful man’s wife. And she will be someone else’s roommate.

Even with everything going on in the next month (my birthday, my mother’s birthday, mother’s day, Albert’s graduation, a bachelorette party and MOVING) Lish and I are making an extra effort to cherish out last month together. That includes Tuesdays dinners together.

Cooking for Lish is always an adventure. She loves flavor and spice and trying to new things. I’m always looking for new dishes to impress her with and this one did the trick.

She said “this has so much flavor” no less than seven times. Five of those times with a mouthful of food. Rude Lish. Rude.

I’ll forgive anyone’s rudeness if they are complimenting me while committing said act of rudeness.

I like compliments THAT much.

You will need…

2 tablespoons olive oil plus 1 tablespoon for the fish
1 cup thinly sliced yellow onion
3 cloves garlic, thinly sliced
2 cups diced tomato
1 medium jalapeno, diced
1 cup dry white wine
1 tablespoon butter
4 (8-ounce) halibut fillets
1 teaspoon kosher salt
2 medium avocados, peeled and sliced
2 tablespoons fresh lime juice
2 tablespoons freshly chopped cilantro leaves

Start by preheating your oven to 350 degrees F.

While the oven is preheating, heat the oil in a medium skillet over medium heat.

Add onion and garlic to the hot oil and cook until the onions are lightly colored, about 3 minutes.

Add the tomato, jalapeno and white wine.

Cook until the wine has reduced by 2/3, about 5 to 7 minutes.

When the sauce has reduced, remove it from the heat until the fish is ready to serve.

While sauce is reducing, heat the butter and 1 tablespoon olive oil in a separate skillet over medium heat.

Season the fish with kosher salt and fresh pepper.

When butter is melted, add the halibut to the pan.

Cook the fish for 2 minutes and flip it over.

Transfer the pan to the preheated oven and bake until cooked through, about 10 minutes.

When the fish is finished cooking, divide the sauce equally among 4 dinner plates.

Place the halibut in the center of each plate on top of the sauce with the browned side up.

Place avocado slices on top of fish and sprinkle with lime juice and cilantro.
